We use the best ingredients, good Cajun cooking seasoned with tradition and a dash of nouveau cuisine. Then we slowly cook it, as our ancestors taught us, in an atmosphere that pays tribute to our heritage and our love of South Louisiana history. Once cooked to perfection, we mixed in a heaping helping of lively Cajun music and Voila!
